Bare Earth has installed a Munters desiccant dehumidifier to maintain the relative humidity (RH) of a drying chamber at 50 per cent RH or lower. The equipment will assist in reducing the curing time of beef for the production of the traditional South African food, biltong. In the Munters system moisture is absorbed onto a slowly-revolving desiccant wheel as the air passes through; a small heater reactivates the wheel in another air stream and drives off the moisture.
